Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 8 oz cremini mushrooms, sliced

  • 4 garlic cloves, minced

  • 1/2 cup chicken broth

  • 1 cup heavy cream

  • 1/2 teaspoon dried thyme

  • Salt and black pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  • Season chicken breasts with salt and pepper.

  • Heat olive oil in a large skillet over medium-high heat.

  • Sear the chicken breasts for about 5–6 minutes per side or until golden and cooked through. Remove from the skillet and set aside.

  • In the same skillet, add mushrooms and cook until browned, about 5–7 minutes.

  • Add minced garlic and sauté for 1 minute until fragrant.

  • Pour in the chicken broth, scraping the bottom of the pan to deglaze.

  • Stir in the heavy cream and thyme. Let the sauce simmer until thickened, about 5 minutes.

  • Return the chicken to the pan and spoon sauce over the top.

  • Simmer for another 2–3 minutes until everything is heated through.

  • Garnish with chopped parsley before serving.

Notes

  • Searing the Chicken: Ensure the skillet is hot before adding the chicken to achieve a golden crust.

  • Deglazing the Pan: Scrape up all the browned bits when adding the chicken broth; these add depth to the sauce.

  • Thickening the Sauce: If the sauce is too thin, let it simmer a bit longer; if too thick, add a splash of broth or cream.

  • Herb Substitutions: Fresh thyme can be used in place of dried; use three times the amount of fresh herbs compared to dried.
