4 boneless, skinless chicken breasts
2 tablespoons olive oil
8 oz cremini mushrooms, sliced
4 garlic cloves, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken breasts for about 5–6 minutes per side or until golden and cooked through. Remove from the skillet and set aside.
